One of our Chef’s recipes called for Amarillo paste made from Amarillo peppers. The aji amarillo chili pepper is a spicy South American pepper with orange-yellow skin and fruity, slightly grassy flavor. Amarillo is the Spanish word for yellow, and Ají is the term for chile (chilis are generally spelled chile in South America) this pepper is also appropriately known as the yellow chile. On the Scoville Scale, the Aji Amarillo ranges from 30,000 – 50,000 Scoville Heat Units (SHU), which is about as hot as a serrano pepper.
You can find seeds if you’re lucky enough to have a garden, or online there are spice companys that sells the powder or paste.
