Avocado Toast with a Twist

Our recent version of avocado toast doesn’t include bread. We washed, dried and then sliced a sweet potato into about 1/3″ and then we toasted. It takes longer than bread; in total about 12 minutes. If you have a toaster oven that would work well too.

While it’s toasting poach an egg if you like. We placed some olive oil, about 1 1/2 teaspoons, in a 1/2 cup measuring cup, and place it in a small pan in simmering water, covered. Poach until it is the doneness that you prefer. This egg was about 4 1/2 minutes and it’s not runny.

Placed sliced avocado on your ‘toast’ and serve with the poached egg topped with herbs if you like. Salt and pepper to taste.
