Ceviche – Healthy Dinner Recipes

Ceviche is a popular dish in many of the coastal regions of Latin America, where seafood is plentiful. The fish is “cooked” in lime juice and mixed with a variety of seasonings, creating a simple and refreshing dish. Use the freshest and best quality fish available.

  • 1⁄2 teaspoon sea salt
  • 1 pinch cayenne pepper
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh oregano
  • 1⁄2 cup finely diced red onion
  • 1⁄4 cup extra virgin olive oil
  • 1 cup freshly squeezed lime juice
  • 4 cloves garlic, minced
  • 2 cups medium diced raw white fish
  • 2 tablespoons chopped fresh cilantro




Step 1:

Combine all ingredients except the fish in a glass bowl and mix well.


Step 2:

Add the fish and cover tightly with plastic wrap. Allow to marinate in the refrigerator for about 1 hour. Turn several times while marinating to distribute juices.


Step 3:

When fish has an opaque appearance, it has been adequately marinated and is ready to eat.


Step 4:

To serve, spoon into a small bowl and top with chopped cilantro. Serve with homemade tortilla chips.
