Ingredients:
- 1 1⁄2 pounds skinless boneless chicken breast, cubed
- juice from 1 lemon
- 1⁄8 teaspoon freshly ground black pepper
- 1⁄2 teaspoon salt
- 1 1⁄2 teaspoons dried oregano
- 1⁄2 tablespoon red wine vinegar
- 2 tablespoons extra virgin olive oil
Directions:
Step 1:
Mix the lemon juice, olive oil, vinegar, oregano, salt, and pepper in a plastic resealable bag. Add the chicken to the bag and marinate for at least 2 hours, preferably overnight.
Step 2:
Preheat a grill. Thread the chicken cubes onto metal or bamboo skewers and grill to an internal temperature of 165 degrees F.
