Ingredients:
- 1 cup raw pecan halves*
- 1 tbsp extra virgin coconut oil*
- 2 tsp honey*
- 1 tsp nutmeg*
- ½ tsp allspice*
- ¼ tsp cinnamon*
- ¼ tsp cardamom*
- juice of one lime (approximately 2 tbsp)**
- 2 tbsp extra virgin olive oil**
- 1/8 tsp fresh cracked pepper, to taste**
- 2.5 oz fresh arugula (about half a tub)
- ½ pound fresh strawberries, sliced
Directions:
Step 1:
For the Spiced Pecans, heat a skillet over medium-high heat. Add coconut oil and honey. Stir in the pecans until fully coated.
Step 2:
Sprinkle the nutmeg, allspice, cinnamon, and cardamon over the pecans stirring to coat evenly.
Step 3:
Continue stirring while cooking until pecans have browned and are fragrant, about 5-6 minutes. Watch carefully to make sure they don’t burn!
Step 4:
Place pecans onto a plate and set aside to cool for about 5-10 minutes.
Step 5:
For the Lime Vinaigrette, mix the lime juice, black pepper, and olive oil well. Pour immediately onto salad or mix again before use.
Step 6:
To assemble, toss the arugula, strawberries, and pecans together.
Step 7:
Top with crumbled goat cheese.
Step 8:
Drizzle dressing over salad immediately before serving. Enjoy!

Tips and Notes:
You can make the pecans ahead of time and store any leftovers in a glass container in your fridge.
