This easy dinner idea uses salmon. Salmon is an excellent source of protein and full of omega-3 fatty acids that are fantastic for your heart. Salmon also happens to be delicious- especially in tacos! You may serve these alone for a great lunch, or add some rice or quinoa and veggies on the side for a perfect dinner. Ingredients:
- 1 pound salmon fillet, skin removed, cut into 1 inch cubes
- 2 tablespoons hoisin sauce
- 1 tablespoon olive oil
- shredded lettuce, to serve
- 8 corn tortillas (6 inches), warmed
- 1 1/2 teaspoons black sesame seeds
- mango salsa, optional
Directions:
Step 1:
Toss salmon with hoisin sauce. In a large nonstick skillet, heat oil over medium-high heat. Cook salmon for 3-5 minutes or until it begins to flake easily with a fork. Turn gently to brown all sides.
Step 2:
Serve salmon in the warmed tortillas and sprinkle with sesame seeds. If desired, top with salsa and cilantro or a light slaw.
