Shrimp with Tomatoes and Feta
These Mediterranean flavors are more in line with the Greek cuisine.

Ingredients
- 3 tablespoons olive oil, divided
- 1 pound medium size shrimp, peeled
- 5 medium cloves garlic, minced
- 1/4 cup ouzo*
- 1 medium onion, chopped
- ½ -1 small hot pepper, seeded and sliced
- 1-2 teaspoons red pepper flakes, to taste
- 3 medium fresh tomatoes, if in season, pureed in a food processor or 1 pound canned crushed tomatoes
- 3 ounces crumbled feta
- Chopped basil if in season or parsley
- Sea salt and freshly grated black pepper, to taste
Instructions
Preheat oven at 350 degrees Fahrenheit
In a large skillet, heat 1 tablespoon of the olive oil over medium-high heat. Add the shrimp and sauté for about 4 minutes then add the garlic and sauté for one more minute. Add the ouzo and sauté for 2-3 minutes. Move to a plate and set aside.
To the pan add the rest of the olive oil and the onion and sauté until translucent, about 5 minutes. Add the red pepper flakes and hot pepper and sauté for 2-3 more minutes. Add the tomatoes and simmer until sauce thickens.
Add the shrimp back in and stir gently. Sprinkle with the feta and bake for 15 minutes. Serve with chopped basil in the summer when it’s fresh or parsley which is available almost all year.
*Ouzo is an anise-flavored liqueur, popular in Greece. If you don’t want to use this, crush 1 teaspoon of anise seeds and add to ¼ chicken or vegetable stock.
