Turkey Melt Panini – Easy Dinner Recipes

If you don’t have a panini press, you can use a waffle iron, or even a griddle or grill. Feel free to use a different bread if you prefer. Ingredients:

  • 4 center cut bacon slices
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 8 ounces thinly sliced turkey breast
  • 8 (1/8 inch-thick) slices tart apple (such as Granny Smith)
  • 4 (1 ounce) slices Colby-Jack cheese
  • sliced bread of your choice

 

Directions:

 

Step 1:

Preheat a waffle iron with 4 compartments to HIGH.

 

Step 2:

Arrange bacon in a frying pan, single layer, and cook on medium high heat until crispy. Remove from pan with a slotted spoon and place on paper towels to drain.

 

Step 3:

Combine mayonnaise and mustard in a small bowl. Spread about 1 1/4 teaspoons mayonnaise mixture over each bread slice. Divide bacon, turkey, apple slices, and cheese evenly among 4 bread slices; top with remaining bread slices, spread side down. Lightly coat both sides of sandwiches with cooking spray. Place 1 sandwich at a time in the panini press, or waffle iron and close firmly on sandwiches. Place a heavy skillet on top of press/iron to help flatten sandwiches evenly. Cook 3 to 4 minutes or until golden brown and cheese melts. If using a griddle or grill, cook 2 minutes on each side, using the pan as a weight directly on the sandwich.
